Sauvignon Bentivoglio

WITH ALL THE LOVE THERE IS

Back in 1996 this was the first wine we produced independently, with the Sauvignon grape variety which is so important to our estate as to deserve the plot at the top of the hill.
The history of this extraordinary variety has been linked to Zola Predosa since the time of the Papal States.
We are so fond of it that we gave the wine a name to recall this (BenTiVoglio means something like ‘my love for you’) for its ability to be strong yet gentle, warm yet harmonious and above all because although Sauvignon is a difficult, sometimes bad-mannered variety, at heart it is deeply good-natured, just needing a little attention.

Production area: estate vineyards in the Zola Predosa Ponte Ronca area of Colli Bolognesi
Harvest method: by hand in crates containing 25kg
Period of harvest: 21 August to 4 September
Vinification: whole-berry cold press with carbonic snow. Temperature-controlled fermentation at 16°C. Lees-stirring for six months.
Grape variety: Sauvignon blanc (70% reductive winemaking, 30% fermented at <10°C)
Training system: vertical trellis, 4500 vines/ha, east-west facing, planted in 2003
Yield per hectare: 5 ton
