Grape harvesting method: late hand-harvesting in 15 kg crates (second harvest) from overripe botrytis-affected grapes
Harvesting time: 14-15-16th November 2011
Winemaking: soft pressing of 12 hr pre-macerated whole grapes. Fermentation in concrete vat with wine liquid drained-off, batonnage sur lies performed daily for the first month and weekly for the next 5 months, racking and ageing rest in concrete vats
