Soil: pseudo-clayey, red Mediterranean soil
Production area: vineyards owned by the wine farm located in the municipality of Zola Predosa Ponte Ronca Colli Bolognesi
Grape harvesting method: hand-harvesting in 25 kg crates
Harvesting time: 17th September
Winemaking: cold-pressing with whole grape berry and use of dry ice. Long Charmat method from grape must (4/5 months) at controlled temperature 15/18 C°, batonnage sur lies during fermentation
Grape variety: Grechetto gentile
Vine training system: Counter-espalier with 4500 plants/ha North/South exposure
