MATURE GRAPES, TIME AND GOOD SENSE

A vineyard, a barrel and over a year resting on the lees.
We wait for the rains to start in early September, we wait for the grape skins to turn from the green of chlorophyll to the brown showing the maturity of the tannins and then we harvest.
What’s important is not the acidity of the pulp, but the structure of the grape that brings elegance and a smokiness to the flavour during its period in the tank. The tank method in fact results in smooth bubbles that makes this a unique wine in the semi-sparkling scene of Emilia…

Production area: estate vineyards in the Zola Predosa Ponte Ronca area of Colli Bolognesi
Harvest: by hand in crates containing 25kg
Period of harvest: 24 August (first pick) 19 September (second pick)
Vinification: whole-berry cold press with carbonic snow. Temperature-controlled 15/18°C long tank method (26 months) starting from the must
Methods: Lees stirring during fermentation
Grape variety: Grechetto gentile
Training system: vertical trellis, 4500 vines/ha, north-south facing
Yield per hectare: 6 ton
